Weeknight Mixed Veggie Beef Stew – Crockpot

Beef Stew

This recipe is crazy-easy to plan ahead and have ready to go when you get home. Perfect for a week night meal when you don’t want to have to “cook.” (And who doesn’t love warm beef stew on a chilly night?)

2 lbs beef stew meat, cubed small

1 can (28 oz) peeled tomatoes, chopped

1 can (8 oz) tomato sauce

1 pkt (2 oz) dry onion soup mix

1 box (26 oz) beef stock

1 cup water

1 bag (16 oz) frozen mixed vegetables (your choice)

 

In large skillet, brown beef, then put in crockpot.

Add all remaining ingredients to crockpot and stir to combine.

Set crockpot heat on LOW, cover and cook for 7 to 9 hours.

Will serve 4 to 6.
